The Irish Soda bread recipe you have all not been waiting for. You can change this up, no cheese, add dried fruit, other herbs etc.

Disclaimer; Apparently, slashing the top of Irish soda bread or poking holes in the four corners of the surface, will let the fairies/devils out. (So don't forget to do that!)

My mum was the queen of quick breads, (and yeast breads for that matter) so why I have taken this long to get an Irish soda bread recipe on here, is anyone's guess. I am pretty sure we ate it when I was a child, and it had oats in it...Of course, to my Irish ancestors horror, I left the oats out and have added cheese. And some leek, just because I cannot imagine plain old bread, (essentially a giant scone) without something to brighten it up a bit. The Irish are famous for their amazing dairy products, so it stands to reason that a stunning cheese would go very well in this bread. And then there is the renowned Irish butter...don't go sparingly with that either! #moreismore

Need

  • 140 Grams cheddar cheese, cubed
  • 50 Grams leek, roughly chopped
  • 1-2 spring onion, sliced
  • 350 Grams bakers or strong flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon baking powder
  • 150 Grams buttermilk
  • 150 Grams soda water
  • 1 Pinch pink salt flakes BUY
  • 1 eggs lightly whisked

Preheat oven to 160°C. Line a baking tray with paper.

Place cheese, leek and spring onion into the Thermomix bowl. Chop 5 sec/speed 8. (Reserve 1 spring onion for

Add all remaining ingredients, except egg wash, and knead 12 sec/Interval.

Tip dough out onto a floured bench. Gently hand knead to form a ball. Flatten to approximately 30cm diameter.

Score in wedges (like a pizza) with a pizza cutter.

Brush with egg wash and sprinkle salt flakes all over.

Bake for 30 minutes. Serve hot. With more butter. Did I need to tell you that?
