Chicken Basil Stir Fry

As time goes on, and as I am mid next big project, I have to say life has taken on new intensity. I am off east next week to cook for four days for a big shopping centre brand new foodie section that is opening. I will be rubbing shoulders with the likes of Pete Evans, Adam Liaw and Michelle Bridges. Bit exciting! I have also been invited to cook in Italy, and more recently Kuala Lumpar...there is still everything else that I am doing in the meantime including doterra oils which I LOVE (go get on board here), so I have to say sorry to my family...they are getting fed if and when I am shooting insider videos or new cookbook pics!! Other than that, they are on their own...but hey, I have a couple of Thermomixes laying around. And they all know where they can get a good recipe from!!

Need
- 4 cloves garlic, peeled
- 1 onion, peeled and halved
- 1 red chilli deseeded
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 1 Tablespoon cornflour
- 1 Teaspoon doTERRA Oils white pepper or a few drops black pepper oil BUY
- 500 Grams chicken mince
- 1 carrot, peeled, julienned
- 20 Grams fish sauce
- 20 Grams tamari
- 1 small zucchini, cut lengthways or 5 small courgettes, sliced down the middle
- Handful fresh basil leaves
- red chillies, sliced to garnish
- cooked noodles of choice to serve

Place garlic, onion, chilli and olive oil into the Thermomix bowl and chop 5 sec/speed 5.

Saute 5 min/Varoma/speed 1.

Meanwhile break up the chicken mince with a spatula and stir through the corn flour and pepper so it is well combined. Set chicken aside.

Add carrot, fish sauce and tamari to the Thermomix bowl and cook 5 min/Varoma/Butterfly/Reverse/ speed 1.

Add zucchini and chicken, and cook 8-10 mins/ Varoma/Butterfly/Reverse/speed 1.

Season to taste, and garnish with fresh basil leaves.

Serve with noodles and extra sliced chillies if desired.
