Lemongrass Chicken Braise
A fragrant Vietnamese-inspired chicken braise bursting with lemongrass, garlic, and spice—effortlessly cooked to perfection in the Thermomix.
Lemongrass chicken is a beloved Vietnamese dish known for its bold, fresh flavours and aromatic ingredients. Rooted in traditional home cooking, it combines fragrant lemongrass, garlic, fish sauce, and a touch of chilli to create a deeply savoury and comforting meal. In this Thermomix version, the braised method captures all the richness and tenderness of the original with minimal effort. It’s the perfect dish to serve over steamed jasmine rice, rice noodles, or even tucked into lettuce cups with herbs for a lighter twist. Top with fresh coriander, lime wedges, and crunchy pickled vegetables for a truly authentic Vietnamese experience.

Need
- 3 stalks of lemongrass, white part only
- 5 cloves garlic peeled
- 1 shallot, peeled
- 1 red chilli
- 4 makrut (kaffir) lime leaves destalked and sliced thinly, plus more for garnish
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 4 boneless chicken thighs, cut into large pieces
- pink salt flakes and pepper to taste BUY
- 2 Tablespoons fish sauce
- 1 Tablespoon soy sauce
- 1 Teaspoon sugar
- 1 limes juice, plus more to serve
- Thermomix Cooked Rice to serve Recipe
Do

Place lemongrass, garlic, shallot, chilli, lime leaves and EVOO into the Thermomix bowl. Chop 5 sec/speed 7. Saute 5 min/Varoma/speed 1.

Add remaining ingredients. Cook 10 min/Varoma/reverse/speed soft. Check occasionally to scrape the bowl.

Serve with steamed rice and additional sliced chilli, lime cheeks and makrut leaves.
