And if you are organised, they can pretty well make them all on their own! If you wanted to make your own tortillas, by all means, go for it. Need
- 1 Handful fresh coriander or cilantro
- 1 Handful Fresh Oregano
- 120–130 Grams parmesan cheese and cheddar, cubed
- 100 Grams chorizo sausage, chopped in large pieces
- 1/2 red onion
- 2-3 cloves garlic
- Few spring onions/shallots
- 250 Grams cherry tomatoes, halved
- 1 capsicum/bell pepper green, diced
- 1-2 ripe avocados
- 1 cob corn
- 200 Grams crumbled feta
- Extra Virgin Olive Oil (EVOO) as needed for frying BUY
- 8-10 Tortillas or purchased tortillas of choice Recipe
- Pumpkin Seed Salsa as needed Recipe

Place coriander and oregano into Thermomix bowl and chop 3–4 sec/speed 7. Remove from bowl and set aside.

Place cheeses into Thermomix bowl and grate 10 sec/speed 7. Transfer to a bowl and set aside.

Place sausage, onion and garlic into Thermomix bowl and chop 5 sec/speed 6. Cook 5 min/Varoma/speed soft.

Prepare remaining toppings and set aside.

Lay out each tortilla and spread with Pumpkin Seed Salsa, grated cheeses, sausage mixture, herbs, and a little of each of the other toppings finishing with the feta and a small amount of grated cheese. Top with a second wrap.

Meanwhile heat a large frypan on Induction 6 for around 6–7 minutes. The pan should not be smoking, but fully heated.

Drizzle with a little olive oil and place the quesadilla into the pan, cover and cook for around 2–3 minutes, turn over carefully and repeat.

Slice into quarters and serve with fresh lime wedges and additional coriander leaves.

You could add a dish of sour cream, guacamole and fresh sliced red chillies to serve with if desired.
