A rich, fudgy brownie naturally sweetened with dates and apple, with bursts of crunchy cacao nibs for a wholesome chocolate hit without the guilt.

This brownie hits that sweet spot between indulgent and wholesome, rich, deeply chocolatey, and beautifully fudgy, yet naturally sweetened with dates and apple. The fruit adds moisture and a subtle caramel undertone, while cacao nibs bring a little crunch and a slightly bitter edge that balances everything out. It’s the kind of bake that feels a bit virtuous, but still delivers when the chocolate craving hits hard.

Perfect for lunchboxes, afternoon tea, or a not-too-naughty dessert, this is one of those recipes you’ll come back to when you want something comforting without going overboard.

Place pistachios and 60g of the chocolate into Thermomix bowl and chop 3 sec/speed 4. Remove from bowl and set aside.

Preheat oven to 180ºC and generously butter a 18cm square pan with removable base (if possible) and set aside.

Place dates, apples and water into Thermomix bowl and cook 7 min/100ºC/speed 2.

Add bicarb soda and blend 10 sec/speed 8.

Add vanilla, cacao nibs, cocoa, sugar, eggs, buttermilk and salt and blend 15 sec/speed 6. Stop and scrape down sides of bowl if necessary.

Add flour and the remaining 100g chocolate chunks and just combine 12 sec/dough setting/Interval.

Spread into prepared tin and top with the choc nut mixture.

Bake 50 minutes until fragrant and skewer inserted comes out almost clean…there should be a little bit of sticky still left on the skewer.

Cool slightly. Melt chocolate and flick or drizzle on top of the brownie, then garnish with extra chopped pistachios.
