This old trick?? Well yes. Perfect every time. Fuss less my friends and enjoy more! I whipped these and some savoury scones up last weekend when the weather was dour and it felt as though a cup of tea would solve the problems of the world...and apparently it did! LOVELY!

For a sweeter scone, use plain lemonade in place of the soda water and add 1 tsp vanilla bean paste.

Need

  • 100 Grams fresh orange juice
  • 150 Grams medjool dates, pitted, plus some more for garnish
  • 350 Grams bakers flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon baking powder
  • 150 Grams cream
  • 150 Grams soda water
  • Generous pinch pink salt flakes BUY

Do

1

Place orange juice and pitted dates into the Thermomix bowl and cook 5 min/70°C/speed 1. Remove from bowl and set aside to cool.

2

Preheat oven to 200°C and line a tray with baking paper. Set aside.

3

Place all remaining ingredients into the Thermomix bowl and mix 12 sec/Interval/dough setting. Add the cooled date mixture and combine 12 sec/Interval/dough setting.

4

Tip out onto floured Silpat mat and gently roll out to 5 cm thick. Cut scones and place onto prepared tray. Use as much flour as you require as these are quite delicate.

5

Brush with a little milk or egg wash and bake 10–12 minutes until well risen and golden.

6

Serve with jam and cream. Natch. And maybe a cup of tea or brewed chocolate.
