Cheddar Buttermilk Scones
Super flaky, buttery, and loaded with sharp cheddar, these savoury scones are everything a cheese lover dreams of.
These savoury cheddar scones are the definition of flaky perfection, thanks to the magic of cold butter and tangy buttermilk. Buttermilk not only adds flavour, but it also helps create those gorgeous layers that pull apart like a dream. Perfect as a side to soups, served warm with a pat of butter, or split and filled with relish and ham for a next-level snack. And of course, your Thermomix makes the dough in seconds without overworking it, so your scones stay beautifully tender.
The real trick to the flaky layers though is the folding technique and not using a scone cutter. We smashed these very quickly, they are hard to resist. The layers are very enticing. Please use a very strong cheddar for best results.

Hazelnut Pecan and Chocolate Scones

Need
- 200 Grams mature cheddar cheese cubed. Reserve a small amount for on top
- 350 Grams bakers or strong flour BUY
- 1 Tablespoon baking powder
- 1 Pinch pink salt flakes BUY
- 120 Grams butter partially frozen, cut into cubes BUY
- 2 spring onions, green part or chives, sliced thinly
- 230 Grams buttermilk, plus a little more for brushing

Preheat oven to 220°C. Line a large tray with baking paper.

Place cheese into the Thermomix bowl and chop 5 sec/speed 8. Set aside.

Place flour, baking powder and salt into the Thermomix bowl. Mix 10 sec/speed 10.

Add butter and combine 5 sec/speed 7 or until just combined.

Add cheese (reserving a little for on top) and spring onions and combine 5 sec/speed 4.

Add buttermilk. 12 sec/dough setting/Interval. Or until combined.

Tip dough onto a floured silpat mat. Form a ball.

Roll out to make a rectangle. Fold dough into thirds, like folding a letter. Roll out again and fold into thirds again. Roll out one last time into a roughly 15cm x 25cm rectangle. Cut into 8 or 10 squares.

Place scones on tray, brush with milk and top with a little grated cheese.

Bake for 12-15 minutes until puffed and browning.
