The Ultimate Gooey Skillet Brownie – Made for Sharing (or Not)
Originally featured in The Weekend Table, this decadent skillet brownie is pure indulgence in every bite. Crisp-edged, fudgy-centred, and rich with dark chocolate, it’s the kind of dessert that brings people together, (with a fork or a spoon around the kitchen bench, trying not to burn their tongues!) especially when served warm with scoops of ice cream melting over the top. Need
- 300 Grams dark brown sugar
- 90 Grams butter BUY
- 1 Teaspoon vanilla bean paste BUY
- 1 Pinch pink salt flakes BUY
- 130 Grams chocolate in pieces plus an extra 80g choc chips BUY
- 2 eggs
- 1 egg yolks
- 70 Grams cocoa powder BUY
- 100 Grams plain flour BUY
- 10 Grams cornflour or cornstarch
- 1/2 Teaspoon baking powder
- 130 Grams macadamias chopped, plus more for garnish BUY

Preheat oven to 150°C. Grease a cast iron skillet with a little butter.

Place sugar, butter and vanilla into the Thermomix bowl and chop 5 sec/speed 6. Cook 15 min/Varoma/speed 2.

Add salt and chocolate, combine 15 sec/speed 6.

Add eggs, cocoa, flour, cornflour and baking powder. Combine 15 sec/speed 5.

Add 130g of macadamias and incorporate with a spatula. Pour into a cast iron or oven proof skillet.

Add the extra macadamias on top and the remaining 80g of chocolate. Press into the batter slightly.

Bake for 25-30 minutes until the brownie has come away from the sides. Let rest a while, it will continue cooking.

Serve with plenty of ice cream and or whipped cream.
