We love a cool summer afternoon scoop of ice cream...how about you? This ice cream is purely sweetened with delicious honey from Honey for Life. You will notice the honey is never heated. This is to preserve it's health giving properties. Eating great honey on the daily is a really good way to stay healthy and fit, so yes, healthy ice cream for you right here! Then add the bee pollen for some crunch...yummers. There are loads of health benefits with eating bee pollen.

Bee pollen is rich in vitamins, minerals, and antioxidants, supporting immune function and reducing inflammation. It may enhance energy levels, promote cardiovascular health, and aid in allergy relief due to its anti-inflammatory properties.

Place 250g of the cream with the vanilla bean paste and powder into the Thermomix bowl and warm 8 min/80°C/speed 1.

Add the remaining cream, milk, salt and honey into the Thermomix bowl and blend 10 sec/speed 8.

Pour into a flat tray or jug and chill completely before churning in an ice cream churner according to manufacturers instructions.

Thermomix method; Pour into a flat tray and freeze. Break into pieces and place half into the Thermomix bowl. Blend for 20 sec/speed 8. Add remaining frozen chunks and keep blending with the aid of the Thermomix spatula until desired consistency is reached. You should serve immediately once re-blended in the Thermomix.

Serve in large scoops with a drizzle of honey and a teaspoon of bee pollen per scoop.
