Macadamia Parmesan Shortbread Wafers
Make on FrescoA little crackers? (I get asked that frequently and my answer is yes...) I love a good cracker to go with my cheese, and to be honest, it is pretty hard to buy a cracker that tastes as good as a homemade one. But don’t take my word for it, give these a little run and you tell me. I love these, they need no cheese to tizzy them up, and can stand completely in their own delicious right.
I think that these are perfect as a Christmas gift. Think wheel of Brie, ribbon and a nice bottle of something naughty....plus these all wrapped up in cellophane! Awwww, great personal pressie!

Need
- 65 Grams parmesan cheese cubed
- Few rosemary leaves
- 65 Grams salted and roasted macadamias
- 45 Grams butter BUY
- 70 Grams plain flour BUY
- Freshly ground black pepper

Preheat oven to 200ºC.

Place Parmesan and rosemary into the Thermomix bowl and mill 10 sec/speed 10. Set aside.

Place macadamias into the Thermomix bowl and mill 7 sec/speed 7.

Place remaining ingredients into bowl including Parmesan mix and blend 8 sec/speed 7.

Tip out onto floured board or Silpat mat, knead together gently with hands, roll out and cut into rounds. Garnish with 1 rosemary leaf in the centre of each biscuit.

Place on lined baking tray and cook for 8-10 minutes until golden around the edges. Allow to cool before serving with dips, olives, cheeses and fruit.
