The No-Bake Raspberry Ripe Weet Bix Slice
This no bake Raspberry Ripe Weet-Bix Slice stands out from other Thermomix recipes for its perfect balance of flavours and health-conscious ingredients. Whilst Weet-Bix is a popular breakfast cereal in Australia, similar cereals exist in other parts of the world. Here are some regional alternatives to Weet-Bix that will work perfectly well in this recipe in exactly the same quantity:
United Kingdom:
Weetabix: This is the closest equivalent to Weet-Bix in the UK. It's made from whole wheat and shaped into large, rectangular biscuits.
New Zealand:
Weet-Bix: The same name and product as in Australia, produced by Sanitarium, is popular in New Zealand as well.
South Africa:
Bokomo Weet-Bix: Similar to the Australian product, Bokomo makes its version of Weet-Bix, which is very popular in South Africa.
United States & Canada:
Weetabix (imported or locally available): You can find Weetabix in the U.S. and Canada, imported or sometimes produced under local licenses. It’s the closest to Weet-Bix, though breakfast cereal preferences in North America tend to lean toward sweeter or different grain products.
Shredded Wheat: This is another wheat-based cereal, though it has a slightly different texture and form compared to Weet-Bix or Weetabix.
India:
Britannia NutriChoice: A somewhat similar wheat-based biscuit that can be found in health-conscious households, though it’s not a direct equivalent.
Germany:
Knusperflakes (by Vitalis or other brands): While not an exact equivalent, Germany has a range of wheat-based, non-sweet cereals that resemble the health-conscious aspect of Weet-Bix.
China and Hong Kong:

The Base
- 5 Weet Bix
- 180 Grams frozen raspberries plus more for the top
- 70 Grams shredded coconut plus a little more for the top
- 25 Grams cocoa powder BUY
- 80 Grams honey
- Pinches pink salt flakes BUY
- 1 Teaspoon vanilla bean paste BUY

The Ganache
- 60 Grams cream BUY
- 200 Grams chocolate BUY
- 20 Grams butter BUY

Line a slice tray with baking paper.

Place all base ingredients in the Thermomix bowl. Combine 20 sec/speed 6. Scrape bowl and repeat. Continue until the mixture comes together. Tip out into tin and push down to flatten evenly.

Place all ganache ingredients into the Thermomix bowl and melt 5-7 min/50°C/speed 3, stopping to scrape down sides of bowl half way through. You may need to add more time depending on how cold your cream and butter are.

Pour ganache over the base. Top with raspberries and a sprinkle of coconut. Refrigerate until set.
