I have been asked for this recipe so many times, that if I had a $1 for every request….I would be, well, not rich, but richer than I am now! So here is the easiest, tastiest fondant recipe around. I LOVE you Thermomix.
Clearly if you want pink fondant without the addition of any other coloring, just use the pink marshmallows which is what I did here. There are varying colours of course so knock yourself out, but I think that other food coloring will overcome the color of the marshmallows that you use as they are quite muted colors normally. The flavor is excellent, but I suggest you do not put this fondant in the fridge at all prior to using as it becomes quite sticky. It possibly is not as flexible for cake decorating as traditional fondant. (Not being a cake decorator, it could just be that I am not as flexible….note the lack of pics of this stuff, and certainly no decorated cakes will ever appear on here!)

- 500 Grams marshmallows (not homemade, sorry folks)
- 2 Tablespoons water
- 500 Grams icing sugar plus some extra
- Vanilla or other flavoured essence to taste
- 2 - 3 Tablespoons cornflour plus some more
Place marshmallows and water into Thermomix bowl and cook for 6 min/70º/speed 2.
Add icing sugar, vanilla and cornflour and mix for 10 sec/speed 6.
Knead for 2 min/Interval.
