Marshmallow Fondant Icing

I have been asked for this recipe so many times, that if I had a $1 for every request….I would be, well, not rich, but richer than I am now! So here is the easiest, tastiest fondant recipe around. I LOVE you Thermomix.

Clearly if you want pink fondant without the addition of any other coloring, just use the pink marshmallows which is what I did initially but then branched out into using a food colour. There are varying colours of course so knock yourself out, but I think that other food coloring will overcome the color of the marshmallows that you use as they are quite muted colors normally. The flavor is excellent, but I suggest you do not put this fondant in the fridge at all prior to using as it becomes quite sticky. It possibly is not as flexible for cake decorating as traditional fondant.

I would recommend one of my breadmats to wrangle this with, it will make your life a whole lot easier, trust me.

Need

  • 500 Grams marshmallows (not homemade, sorry folks)
  • 2 Tablespoons water
  • 500 Grams icing sugar plus some extra
  • vanilla bean paste or other flavoured essence to taste BUY
  • 2 - 3 Tablespoons cornflour or cornstarch plus some more
  • food colouring as desired

Do

Place marshmallows and water into Thermomix bowl and cook for 6 min/70º/speed 2.

Add icing sugar, vanilla and cornflour and mix for 10 sec/speed 6.

Knead for 2 min/Interval/dough setting. You can add colouring in at this stage if you wish

Wrap in cling film and keep at room temperature or roll out immediately and use as you would any other fondant. You may need to use cornflour to dust it with to prevent it sticking to your rolling pin or breadmat.
