We decided to go all out with the Weet-Bix slice request by the way, so this was our first idea...naturally as lemon is a no brainer for amazing flavour. But we also went with some no bake options, a little more elegant version or two and we really cannot decide which one is our favourite. You must try them all and let us know! (I think this one is pretty amazing, but I really love the Florentine Weet-Bix slice as well.)

If you are in the USA or UK, you can use Weetabix, which is almost entirely the same cereal. At a pinch you can weigh out wheat flake cereal which after all is just de-constructed Weet-Bix, basically!

For a gluten free option, there are gluten free Weet-Bix available so substitute those in and rather than the flour, use fresh almond meal though the texture will vary slightly.

We have used doTERRA lemon oil in the frosting for this recipe and it does make a huge difference flavour wise. If you don't have any and you are completely desperate to eat them immediately, just use loads of lemon zest.

Preheat oven to 180°C. Line a slice tray with baking paper.

Place weet bix, coconut, flour, baking powder, sugar, salt and zest into the Thermomix bowl. Combine 5 sec/speed 5.

Add butter and vanilla. Combine 5 sec/speed 5.

Spread into the prepared tray and smooth surface with a spatula. Bake 15 minutes. Cool.

To make the frosting, place all ingredients into the Thermomix bowl and combine 10 sec/speed 5.

Place in fridge to set. Slice into squares and garnish each piece with an edible flower if desired.
