I love Mexican food, there is a Mexican ebook with my name on it, if you weren't up to speed with that one. SO many great flavours that are fresh and authentic as well as a few made up by me, that are my take on Mexican ideas.

Paletas have come into their own in Australia of late, I have seen them a few times at night markets or foodie events. But nothing beats your own. Don't stop at pineapple...try your fave fruits and see! You can absolutely convert this recipe to be any flavour fruit you have handy or love!

Need

  • 100 Grams sugar
  • 100 Grams water
  • 500 Grams fresh pineapple in pieces
  • Flavours of choice: Lime juice, rum, cinnamon, vanilla, star anise, tamarind
  • TASTE:
  • Use any fruits of choice to make paletas. They are meant to be hard and icy. Perfect for the hot weather in Mexico ... or Australia!!

Place sugar and water into the Thermomix bowl and cook 8 min/100°C/ speed 1.

Remove from the bowl and chill completely.

Place the pineapple into the Thermomix bowl and mince 2 sec/speed 5.

Remove half of the minced pineapple.

5  

Add syrup and flavours of choice to the remaining pineapple and blend 6 sec/speed 6. Strain out the solids. Add minced pineapple back into bowl.

Pour into moulds, freeze until slushy stage and then insert sticks. Freeze until completely hard.
