Salmon and Asparagus Pastries
Looking for an elegant breakfast pastry? Or a light lunch for that matter? We have you covered. If you have ever made the Puff Pastry recipe on this site, and have some ready rolled and in the freezer, this is a super impressive but really simple thing to whip up for either a special occasion brekky or just a weekend lunch with friends.
We did these as part of a breakfast board, which has yet to see the light of day, but you never know...it may still make an appearance. In the meantime, we couldn't hold back, these are so yummy.
I hope you enjoy them! (They're as difficult and fussy as making the pastry, which isn't...so there you go!)

Need
- 1 Batch Puff Pastry rolled and ready to use Recipe
- 8 Slices swiss cheese
- 8 Slices smoked salmon or trout
- 3 Bunches fresh asparagus, trimmed
- 2 eggs for brushing

Preheat oven to 180°C. Line 2 baking trays with paper.

Roll out puff pastry and cut into 8 equal squares.

On each square place a slice of cheese. Top with salmon and 2 or 3 asparagus spears.

Fold 2 corners of the pastry into the centre and press together to seal.

In a small bowl, whisk the eggs with a fork and brush over the pastries.

Bake for 20 minutes, until golden. Serve hot.
