Simple Fennel Salad
It doesn’t get any simpler than this salad. Seriously. Fennel can be quite pricey and some fennel bulbs are smaller than others, so I suggest you pick your time to make this one based on seasonal availability. But it is wonderful when paired with pork, roasted, pulled or otherwise, fantastic to replace a coleslaw in a sandwich any time, or just as a great accompaniment or side dish on any occasion when you need something delicious and a little bit different.

Need
- 4 fennel bulbs, quartered (reserve greens for garnish)
- 1/2 red onion
- 2 Tablespoons Extra Virgin Olive Oil (EVOO) EVOO BUY
- 1 Tablespoon apple cider vinegar
- Juice 1/2 orange
- pink salt flakes pink salt flakes to taste BUY
Do
- 1
Place all ingredients into Thermomix bowl and chop 3-6 sec/speed 5. Serve!
