Steamed Spinach With Hazelnut And Fennel Dressing

Well kids…as For Foods Sake is totally sold out and not appearing on shelves near you any time soon, I thought I would put out this teaser to keep you keen…Late August is the official date for its arrival, so stay salivating until then will you?? This is just a little side dish, delish and easy. You can really load up as much spinach into it as you can manage to fit in and wilt down, because wilt down it does. Enjoy…and don’t say I never give you anything…really!

  • 1 tsp fennel seeds
  • 2 cloves of garlic
  • 1 tsp dijon mustard
  • 1 juice of an orange
  • 70 g Cobram Estate Extra Virgin Olive Oil EVOO BUY
  • 70 g hazelnuts, roasted and skinned
  • 400 g baby spinach leaves
  • 1 Litre water



Place fennel seeds into Thermo bowl and dry roast 10 min/Varoma/speed 1.


Add garlic, mustard, orange juice and EVOO and blend 10 sec/speed 6.


Add hazelnuts and blend 3 sec/speed 5. Remove from bowl and set aside.


Place ½ the spinach into steamer dish. Pour water into Thermo bowl and set steamer into position. Cook 5 min/Varoma/speed 4. Add remaining spinach and cook 5 min/Varoma/speed 4.


Toss dressing through and serve warm. Garnish with a few additional chopped hazelnuts.
