Pomegranate Molasses Biscuits (Cookies)
I think someone asked me for this recipe a while ago as I had a pic, but no recipe…well played around and here it is. It may not be precisely the same as the one in the picture…but you get the idea. Chewy, a little salty/sweet and unique. LOVING Pomegranate Molasses…awesome stuff; Go get some…do it!

Need
- 140 Grams butter cubed BUY
- 100 Grams raw caster sugar BUY
- 60 Grams pomegranate molasses
- 1 Teaspoon vanilla bean paste BUY
- 1 Pinch pink salt flakes BUY
- 210 Grams bakers or strong flour
- 1/2 Teaspoon baking soda
- 110 Grams shelled pistachios

Preheat oven to fan forced 180°C and line 2 cookie trays with baking paper.

Place butter, sugar, molasses, vanilla and salt into Thermomix bowl and mix 30 sec/speed 3.

Whip 30 sec/Butterfly/speed 3. Scrape down sides of bowl and repeat.

Remove Butterfly. Add flour and pistachios and mix 30 sec/Interval/dough setting.

Use a dessert spoon to form into rounds on prepared trays. Bake for 8-10 minutes until golden. Cool on baking tray before removing to cooling rack.
