Cut the Butter Cakes in halves horizontally and and brush generously with the sugar soak.

To make the sugar soak, combine all ingredients in a bowl and stir until the sugar has melted.

Make the Ermine Frosting as recipe directs, then add the lemon oil and yellow colouring to it at the end, and continue to whip 20 sec/Butterfly/speed 4. Spread the cut cakes with ermine frosting then put the cake tops back on.

Trim one cake to resemble a duck's body. (watch the video!)

Cut a circle for the head out of the other cake. Use some of the remainder of the cake to add a tail and some height to the duck's head using the frosting as glue.

When you're happy with the shape it's time to do a crumb coat of frosting.

Secure the head in place using a dowel (or a boba straw like we did).

Spread a thin layer of frosting all over your duck, scraping off any excess frosting. Refrigerate for 1 hour at least.

Now for the feathers. Using a piping bag and a 1cm round tip, pipe small blobs of frosting in a line, then with an offset spatula (or a butter knife) drag the frosting down. Continue this process in rows all over your duck. Refrigerate for minimum of one hour.

Place the red bow on your duck's neck and a row of smarties down the front like buttons.

Find 2 curved smiths chips to create your duck lips, stick into place with the frosting. You may go through the entire pack to find just the right ones, but they do make the cake, so choose well!

Press 2 smarties where you want its eyes to be, then place a circle of black fondant or liquorice around the smartie.

To make the popcorn hair, add yellow food colouring to the melted butter then pour over the popcorn and toss until the colour is noticeable.

Press popcorn onto your duck's head. Build it up a bit as you wish.

Not sure where you will put candles if you need them, but this cake is sure to delight the kids and big kids alike.
