Cheesy Chicken Nuggets

The easiest and healthiest chicken nuggets you’ll ever eat. They are delicious, great fun for the kids and too easy. Get on it. Gluten free as well!

These are officially a family favourite. I do love a little crispy bite and so apparently do most people!! The kids especially. This recipe appears in my latest cookbook, now available here in my store, (go get it!) and this recipe now as officially one of the faves, is available to you as Insiders.

Full of cheesy chickeny goodness, they are perfect as an after school snack, pair them with mash and salad for dinner, make them bigger for a sort of schnitzel (cooking time will vary) or just pack them cold into lunch boxes for an easy take away. You’re welcome!

Recently we have been using an Air Fryer in the test kitchen and these work wonderfully well in there. You could potentially pre make them all, freeze in batches that will fit in your airfryer and then cook to order. Fantastic mum!

Need

  • 300 Grams almonds whole
  • 100 Grams parmesan, cubed
  • 2 Teaspoons paprika
  • 2 cloves garlic
  • 750 Grams chicken breast fillet, cut in 2-3 cm pieces
  • 250 Grams cream cheese
  • 1 egg
  • 1 Teaspoon onion powder
  • 1 Teaspoon pink salt flakes BUY
  • Freshly ground black pepper to taste

Preheat oven to 200°C and line a baking tray with baking paper.

Place almonds, parmesan and paprika into the Thermomix bowl and mill 7 sec/speed 7. Tip contents from bowl onto a plate and set aside

Place garlic into the Thermomix bowl and chop 2 sec/speed 7.

Add chicken, cream cheese, egg, onion powder, salt, pepper and 50g of the milled almond mix. Blend 15 sec/speed 8.

Scrape down sides of bowl and around blades. Repeat blending until well minced and incorporated.

With wet fingertips, measure one tablespoon amounts of the chicken mince and shape into nuggets. Coat nuggets well in the almond mix. It helps to have two people doing this step. (Cue hungry children.)

Place nuggets onto lined baking tray and bake 12 minutes. Turn nuggets over and bake a further 8 minutes until firm and golden.

Serve with sauces of choice.

If using an airfryer, preheat the fryer to 200°C for around 4-5 minutes. Drizzle the nuggets with EVOO on both sides, place in a single layer in the airfryer and cook for 10 minutes. They will be browner on the bottom, (depending on your device) so turn them over if you want an even colour. But they are just perfect! You could premake all the nuggets, freeze in batch size packages and then cook to order.
