There are times, I am sure you can agree, that you need to show off a little. This is soooo simple, but sooo pretty. And a little different to your run-of-the-mill mash, and very versatile. Go green! To keep it green, you do need to serve it pretty quick and adding the peas as a garnish with fresh herbs just tip it over into a little bit clever!
TASTE:
Add a little more cream to make a pouring consistency and serve through hot, cooked ravioli or tortellini. Drizzle with extra virgin olive oil and add plenty of shaved parmesan and pan-fried pancetta.
Serve on garlic toasted bread with soft cheeses and fresh thyme.

Need
- 1 Handful flat leaf parsley
- 300 Grams frozen peas, plus some more
- 35 Grams cream BUY
- 35 Grams butter BUY
- pink salt flakes and pepper to taste BUY
- A few thyme sprigs to garnish
Do

Place parsley into the Thermomix bowl and chop 2 sec/speed 5. Remove from bowl and set aside

Place peas, cream and butter into the Thermomix bowl and cook 6 min/100°C/speed 2.

Puree 30 sec/speed 7. Scrape down sides of bowl and repeat.

Add parsley and seasoning and stir through 3 sec/speed 7. Keep hot until ready to serve.

Garnish with thyme as desired. This will thicken on standing.
