If you can get Empire, you must! If you cannot, then Careme is a great option also. If neither, it is time to make your own!

Need
- 1 Batch Puff Pastry or 2 commercial sheets of puff pastry Recipe
- 2 cloves garlic peeled
- 50 parmesan cheese cubed
- pink salt flakes and pepper to taste BUY
- 1 eggs plus egg wash
- Pinches fresh nutmeg
- 80-100 Grams baby spinach leaves
- 250 Grams Fresh Ricotta Cheese or store bought Recipe
- 100 Grams feta cheese Greek, crumbled
- 1 Tablespoon black and white sesame seeds

Preheat oven to 190°C. Line 2 oven trays with baking paper.

Either make your pastry well in advance or if using commercial, thaw puff pastry on bench.

Place garlic and parmesan into the Thermomix bowl and mill 10 sec/speed 10.

Add salt, pepper, egg, nutmeg and spinach. Mix 6 sec/speed 6.

Add ricotta and feta and fold through.

Cut each puff pastry sheet into quarters (4 equal squares). Brush egg wash over the edges.

Spoon filling in to each square. Fold the pastry in half diagonally to enclose the filling. Pinch edges with a fork.

Place on prepared trays. Brush with egg wash and sprinkle with seeds. Bake for 25 minutes, or until golden brown.

Serve hot or cold, they are fantastic the next day!

You can make these more of a bite by making them a lot smaller, just a little bit fiddly to handle that is all.
