Easy Sausage Scrolls
School holidays are always a time when you need to be able to come up with something fast and easy and tasty at a moments notice. This is that recipe.
I remember when I had five kids home for the 6 weeks of summer and of course if they all had just one friend each over, I had a veritable gaggle of hungry kids to keep fed. These sausage scrolls are such a recipe and so simple the older kids could manage it themselves. Just 3 ingredients (if you leave out the thyme) and some oven time and you are feeding them all in no time!

Need
- 1 Batch Puff Pastry ready to roll, or 2 commercial sheets of puff pastry Recipe
- 5-6 good quality sausages of your choice
- 100 Grams mature cheddar cheese cubed
- 6 bocconcini, torn into pieces
- fresh thyme sprigs to garnish
- Fermented Tomato Ketchup or your fave tomato sauce to serve Recipe

Lay out the pastry on a bench and make sure you either have the silpat mat underneath or the plastic lining it was wrapped in originally. This will help you roll it up later.

Skin the sausages and press the sausage meat all over the pastry, as close to the edges as possible. You need good coverage or you will end up with a lot of pastry and not much else.

Place the cheese into the Thermomix bowl and mill 10 sec/speed 10.

Spread across the sausage meat. Arrange the bocconcini on top if using and a few thyme leaves as well. Roll up using the bread mat to help you and place into the freezer for a minimum of 30 minutes.

Preheat the oven to 200-220°C and line a baking tray with paper. Set aside.

When ready to bake remove from the freezer and cut across the roll into rounds, placing cut side up on the prepared tray. Bake for 25-30 minutes until golden and fragrant and oozy.

Cool slightly as melted cheese is hotter than the sun! Drizzle with sauce of choice and eat a couple! Share with others if you are a nice human.
