Get ready to make the ultimate homemade potato crisps—also known as potato chips, or wafers depending on where you are in the world! While this recipe takes a bit of effort, the reward is a bowl of perfectly crispy, golden delights you can't resist. Customize your crisps with delicious flavor additions like smoky paprika, garlic powder, or fresh herbs like rosemary and thyme. For a gourmet touch, try truffle salt, parmesan cheese, or even a sprinkle of chili flakes. Whether you call them crisps or chips, these homemade treats are worth every step!

Warning: these are amazing and I am confident that you could smash a bowl of these on your own. So make way more, it isn't hard to double up, while you're at it.

Preheat oven to 160°C. Line 2 oven trays with baking paper.

To make the infused oil, place all ingredients, except the EVOO into the Thermomix bowl and chop 10 sec/speed 8.

Scrape bowl and add EVOO. Cook 10 min/70°C/speed 1. Pour into jar.

Peel and slice potatoes thinly. Pat dry with paper towel or a clean tea towel. Place in 1 layer onto prepared oven trays.

Brush both sides with the Infused Oil. Sprinkle with extra chilli flakes if desired. And chopped chives.

Bake 20-30 minutes until browned, but definitely crisp. Leave them in the turned off oven for as long as it takes them to cool down. This will help them crisp up really well.

Sprinkle with salt flakes whilst still hot.
