Place almonds, chia and coconut into Thermomix bowl and blend 30 sec/speed 8 to form a paste.

Scrape down sides of bowl.

Add remaining ingredients and blend 40 sec/speed 6.

Remove from bowl and place into the fridge for around 10 minutes.

Form into balls, roll in shredded coconut to coat, and refrigerate until use.

These will keep well in the fridge for up to 2 weeks. Best served cold due to the coconut oil but will keep quite well in a cool insulated lunchbox.
