Chopped Salad Pizza
We love pizza night in our house and have been topping our pizzas with salads of varying descriptions for years. Enter the Thermomix cutter...and voila, we have shaved cheeses, sliced salami, amazing flavours all coming from a salad topping on a pretty basic pizza base...get on this one. I promise you will love it.

Need
- 400 Grams EVOO Fridge Dough pre-made and ready to roll Recipe
- a few Tablespoons tomato paste
- a few Tablespoons Dry Italian Seasoning Recipe
- 60 Grams parmesan cheese
- 200 Grams mature cheddar cheese Swiss or any other medium soft cheese of choice
- 100 Grams salami, skin or casing removed

Salad
- kalamata olives
- 200 Grams cherry tomatoes
- 1 capsicum/bell pepper red, de-seeded
- 1/2 cos lettuce
- 1 Handful basil
- 1x 400g Tin chick peas drained
- pink salt flakes and black pepper to taste BUY
- 100 Grams feta cheese crumbled

Pre-make and rise the pizza dough. If you are using the EVOO Fridge Dough, simply roll out two rounds of pizza dough and place onto baking paper. Allow to double before proceeding.

Divide dough into as many pizzas as you plan on making and place each round onto a piece of baking paper. We made two.

Spread a tablespoon or more as needed of the tomato paste on top of each pizza round. Sprinkle with the Dry Italian seasoning to taste. Leave to continue rising.

Preheat your pizza stone in an oven that will go as high as you can get it. My oven will go to 275°C, so really, higher is always better with pizza.

Shave the parmesan as demonstrated in the video, using the thin slice option. Remove and set aside. Change the cutter to the grating side of the blade.

Cut your soft cheeses to fit through the hole of the cutter. We are going to shred these.

Guide each piece of cheese through using the grater, thin option. Remove cheese and set aside.

Cut the salami using thick slice option.

Add shredded cheese and salami slices to your pizzas.

Go to town with your slicer with the salad ingredients, the onion, red pepper, olives, tomatoes, even the lettuce can all be chopped using the attachment.

Combine all the salad ingredients in a large bowl and set aside.

Cook your pizzas until puffed and fragrant and sizzling on top. If the oven is hot enough, it should only take about 5-8 minutes per pizza.

Remove from the oven, top with the salad and eat!
