Cucumber Basil Lemongrass Cooler
As summer approaches, you had better put this on your list. It is the perfect refresher after a hot day, with or without the alcohol! Chin Chin!
One of the things that first attracted me to the Thermomix was the ability to make just about anything from scratch, in a very short space of time, including the easiest of fresh lemonades. This is one of my faves. The combination of flavours screams hot summer days, and of course you can leave the rum out and get the kids drinking cucumber!! They should all love that.

Need
- 2 stalks lemongrass, white part only
- 2 handfuls basil leaves
- 1 medium cucumber, cut into pieces
- 4-6 large lemons, quartered
- 150 Grams golden caster sugar
- 400 Grams ice cold water
- Sparkling water to taste
- Ice to taste
- White rum to taste
- Cucumber slices and basil leaves for garnish
Do

Place lemongrass and basil into Thermomix bowl and chop 4 sec/speed 6.

Add cucumber, lemons and sugar to Thermomix bowl and chop 3 sec/speed 5.

Add water and stir 30 sec/Reverse/speed 2.

Strain mixture well into a 2L jug.

Add sparkling water/rum and ice to taste.

Serve garnished with cucumber slices and basil leaves.
