OH NO! Cookies in a few minutes? These are scarily delish and ultra quick to cook which scares me even more. If you have an Air Fryer, it is time for the best cookies ever! They literally take 5 minutes for 4 or 5 cookies per batch, which might be a good thing, as you can then limit the bake, but it could also end up being frustrating. You tell me. Air Fryers are the bomb when you can do this while you're working on something else.

- 160 Grams butter BUY
- 140 Grams light brown sugar
- 50 Grams raw caster sugar BUY
- 1 Teaspoon vanilla bean paste BUY
- 1 Teaspoon pink salt flakes plus more for sprinkling BUY
- 170 Grams plain flour BUY
- 1/2 Teaspoon baking soda
- 30 Grams cocoa powder BUY
- 150 Grams Callebaut Gold Chocolate Callets
- 70 Grams macadamias roasted and roughly chopped BUY

Place the butter, sugars and vanilla into the Thermomix bowl and chop 5 sec/speed 5. Insert Butterfly.

Whip 1 min/Butterfly/speed 4. Remove Butterfly.

Add remaining ingredients, except chocolate and macadamias and blend 10 sec/speed 6. Scrape down sides of bowl and repeat.

Add chocolate and macadamias and fold in with a spatula.

Tip dough out onto a floured piece of baking paper (I used two as I wanted two rolls) and form into a sausage shaped roll. Wrap and refrigerate for at least 30 minutes before baking.

Preheat Air Fryer to 190°C. Line the bottom of the basket with baking paper.

Cut the cookie dough roll into 2cm thick slices. Place 4 cookies (or more if you have a large Air Fryer) on the baking paper and sprinkle with salt. Cook for 5 minutes. Continue cooking in batches until all your cookies are cooked.

Cookie dough can be frozen and sliced and baked from frozen. Just adjust cooking time.

Alternatively these cookies can be baked in an oven at 170°C for 12 minutes.
