Khachapuri (Georgian Cheese and Egg Bread)

I have been wanting to make these for ages and finally we got around to doing it. I have to say if you had a wood fired oven, these would be even more amazing because even in the normal oven, they were fantastic. The bread recipe is beautiful, you could make that all by itself too. Traditionally you tear the crust off and dip it into the cheese and egg. We fried our eggs, oops. Non traditional but the oven was not hot enough to cook the egg and the bread simultaneously so we took the easy way out. If you were traditional you would break the egg on top of the filling before baking and good luck!

Is there anything better than cheese, eggs and bread? Not a lot in our opinion...just remember, this can feed a Russian army, and probably once did!

To make the dough, place milk, water, yeast and sugar into the Thermomix bowl. Warm 2 min/37/speed 2.

Add flour, butter and salt and mix 6 sec/speed 6. Knead 4 min/Interval.

Wrap dough up in a floured silpat mat. Let rise till doubled.

Line 2 oven trays with baking paper.

Place mozzarella into the Thermomix bowl and chop 4 sec/speed 8.

Divide dough into 4 pieces. On a floured bench, roll each dough out into an oval shape and place on oven tray.

Top with grated mozzarella and crumbled feta. Leaving a 1" border.

Fold dough edges in all the way around to create a little wall. Leave to rest, covered for 30 minutes.

Whisk up 1 egg, with a little water and brush the edges of the pastry.

Preheat oven to 190. Bake for 20-25 minutes, until nicely browned.

Top with 1 fried egg per bread.

Garnish with chives.
