Fermented leek-chi butter tossed through chewy homemade udon noodles, comfort food with a cultured twist.
These leek-chi buttered noodles are what happens when slow comfort meets good bacteria. Silky homemade udon noodles (the ones we love) get coated in fermented leek butter that melts into something deeply savoury, gently funky and outrageously comforting. It’s a bowl of noodles that feels indulgent but quietly does your gut a favour too. Simple, slurpable and endlessly adaptable, this is one of those recipes you’ll come back to on repeat when you want maximum flavour with minimum effort.

Need
- 1 Batch Udon Noodles (keep 1 cup of the pasta water) Recipe
- 100 Grams parmesan cheese cubed
- 1 brown onion sliced thinly
- 80 Grams Leek-Chi Butter Recipe
- 1 zucchini, julienned
- 100 Grams baby peas
- 60 Grams fresh lemon juice
- pink salt flakes and pepper to taste BUY

Premake the noodles and when ready to eat, cook them in plenty of salted boiling water.

Place parmesan into the Thermomix bowl. Mill 8 sec/speed 8. Set aside.

Place onion and Leek-Chi butter into the Thermomix bowl. Cook 5 min/Varoma/speed 1.

Add the buttery onions and zucchini to a large pot or frying pan, over a medium-high heat, Cook until starting to sizzle then add the cooked noodles, a cup of pasta water, peas, parmesan and lemon juice.

Toss well until combined. Taste and season as needed.

Add more Leek-Chi Butter if you wish.
