Green Flatbread
- 2 Bunches broccolini (1 roughly chopped and the other left whole)
- 50 Grams baby spinach leaves
- 2 cloves garlic
- 130 Grams almond meal Recipe
- 4 eggs
- Pinches pink salt flakes BUY

The Toppings
- the remaining charred broccolini
- Kefir Ranch Dressing to taste Recipe
- Creamy Herb and Garlic Kefir Cheese to taste Recipe
- pickled beetroot to taste
- fresh mint and dill
- edible flowers (optional but so pretty!)

To make the flatbread, preheat the oven to 180°C. Line 2 oven trays with baking paper.

Place 1 bunch of broccolini into the Thermomix bowl (reserving the other bunch for topping), add spinach and garlic. Chop 10 sec/speed 8. Scrape bowl and repeat.

Add remaining flatbread ingredients and combine 6 sec/speed 6. Scrape bowl and repeat.

Spread across the 2 trays and bake for 20-25 minutes. Cool.

Turn the grill onto high in the oven and add broccolini. Cook until starting to char.

Cut flatbread into desired shapes and get topping!
