Luxembourg Bretzelsonndeg

Bretzelsonndeg is celebrated on the 4th Sunday of Lent. Save the date, because if you forget it, it could have a negative impact on your love life!
In fact, on Pretzel Sunday, (Bretzelsonndeg) men give these delightful pastries - pretzels - to their sweethearts as a token of their feelings. If all goes well, the men receive eggs from them for Easter. Otherwise, they will get an empty basket, hence the Luxembourgish expression 'de kuerf kréien' (to be given the basket), meaning to be rejected!
In leap years, the tradition is reversed: girls offer their sweetheart a pretzel.
My son lives in Luxembourg at the moment and so this is how I even heard about this tradition. I loved the idea so much, some research was done and here we have our own version of the pastry pretzel, not the German bread pretzel, but this beautiful pastry! So much fun. My granddaughters went out on Bretzelsonndeg and got themselves a pretzel that was almost bigger than them!

Need
- 50 Grams almonds chopped
- 130 Grams Pistachio Paste premade Recipe
- 1 Batch Puff Pastry ready to use Recipe
- 1 egg, whisked, for egg wash
- 30 Grams Dried Apricot Preserves melted with a little water Recipe
- 30 Grams almond slivers, toasted

The Glaze
- 70 Grams icing sugar
- 1 Tablespoon milk

Preheat oven to 180°C. Line an oven tray with baking paper.

To make the filling, place almond into Thermomix bowl and chop 3 sec/speed 6. Add pistachio paste and mix 6 sec/speed 6.

Cut puff pastry in half. Cover and set aside one half. Roll out the other half to a large rectangle. Roughly 80cm x 20cm. Cut in half length ways.

Spread half of the filling on to one of the lengths of puff pastry and place the the other piece of puff on top. Twist the pastry into a spiral then form into a pretzel shape. Repeat with remaining puff pastry to make a second bretzel.

Brush with egg wash and bake for 30-35 minutes, until browned.

While still hot, brush with warm jam mixture. Cool.

To make the glaze, place icing sugar and milk in clean, dry Thermomix bowl. Combine 20 sec/speed 6. Scrape bowl and repeat. Drizzle glaze over Bretzels. Sprinkle with toasted almond slivers.
