Nut Praline
Crunchy Golden Nutty Praline...choose your nut!
Sometimes, it’s good to go old-school, and this glossy, crunchy nut praline proves it. Caramelised to perfection and packed with roasted nuts of your fancy, this recipe doesn’t rely on a Thermomix though to crush it you will definitely need the thermie! All you need is a pan, a little patience, and a sweet tooth. Shatter it over cakes, ice cream, custard, or just break off shards for snacking. Originally from Keeping it Simple, which is no longer available in print but does come as an epub version. Classic technique, show-stopping results.
Use a shard sticking straight out of a piece of cake or tart to garnish.
Try stirring some Nut Praline through whipped cream for a little extra touch to any dessert.
Use a spoonful of milled praline as a garnish on a dessert plate.

Need
- 200 Grams nuts of choice
- 300g white sugar

Toast nuts by placing into a cold oven set to 200°C and cook 10-15 minutes. Remove immediately. Place onto a Silpat mat.

Meanwhile, place sugar into a flat frypan on a low heat. Without stirring, allow sugar to melt. It may take quite a long time. Stir occasionally. When fully melted, pour over nuts on Silpat mat. Allow to set until solid.

Break up into shards and either use as a garnish, or place into Thermomix bowl and mill 6 sec/speed 5 for a coarse texture, or longer for a finer blend.

Store in an airtight jar until ready to use as directed.
