YES, you read that correctly, beans are the star ingredient of this yummy good for you fudge.

Who says fudge can’t be healthy and delicious? This creamy, dreamy vanilla bean fudge is sweet, smooth, and secretly packed with goodness—thanks to the humble bean. Don’t let that surprise you! Butter beans add a silky texture, a dose of plant-based protein, and fibre, all without compromising that rich fudgy bite. Infused with real vanilla bean paste for a naturally sweet, fragrant finish, this treat is perfect for when you want a little indulgence with a healthy twist and that pinch of salt just finishes the flavour perfectly. Place almonds, coconut palm sugar and vanilla into Thermomix bowl and blend 30 sec/speed 7. Scrape down sides of bowl.

Add beans, coconut oil and salt and blend 40 sec/speed 7-8 or until smooth and well combined.

Spread into a small tin with removable base. Refrigerate several hours.

Drizzle with melted chocolate to taste. Allow to set before slicing into mouth sized pieces. Store in the fridge.
