Very Vanilla ‘Bean’ Fudge

This fudge is a result of being asked to provide a ‘healthy’ sweet treat recipe for a website; Spiritstate.com.au, a wonderful little pause in my daily rush with plenty of health and beauty inspiration to go the distance. You should all pop over and be inspired as well. I am delighted to become part of the team on this occasion! You will see a few of my healthier recipes showing up on there in the months to come. In the meantime, get your head around the idea of a bean fudge, not a vanilla bean fudge (even though there is plenty of that going on!) but an actual fudge with beans, butter beans to be precise, in the mixture.

Now you should know me by now, I am not afraid of a sweet treat or three, and this was no exception. Trust me...you’re going to love it, no matter where it’s bean!

Place almonds, coconut palm sugar and vanilla into Thermomix bowl and blend 30 sec/speed 7. Scrape down sides of bowl.

Add beans, coconut oil and salt and blend 40 sec/speed 7-8 or until smooth and well combined.

Spread into a small tin with removable base. Refrigerate several hours.

Drizzle with melted chocolate to taste. Allow to set.

Serve cut into very small pieces.
