Pepperoni Pasta with Lemon
The simple dishes are often the best. This is such a dish. A real family pleaser and a mum pleaser because it is so easy!
I often find that the simplest meals are the best. This is so easy, the kids can do it! It is a real family pleaser, and therefore I guess a mum pleaser.
Get your water on for the pasta and then the rest is done in the time it takes to cook the pasta.
When my boys were growing, we had pasta on the menu probably twice a week at least. They loved it, it filled them up, there were often leftovers for after school snacking the next day and it was always simple to whip up.

Need
- 500 Grams short pasta of choice, cooked as per package instructions.
- 6 cloves garlic
- 1 red chilli
- 300 Grams pepperoni, cut in pieces
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 1 Teaspoon fennel seeds
- 100 Grams tomato paste
- 1 Tin diced tomatoes
- 1 lemons zest
- 1 Handful basil leaves
- 30 Grams parmesan cheese grated, as required

Cook pasta as per package instructions.

Place garlic, chilli, pepperoni and EVOO into the Thermomix bowl. Chop 5 sec/speed 7. Sauté 7 min/Varoma/speed 1.

Add fennel seeds, tomato paste and tinned tomatoes and cook 10 min/Varoma/speed 1. Pour over pasta. add lemon juice and basil leaves. Stir to combine.

Serve immediately before the pasta starts to absorb the sauce, with plenty of grated fresh parmesan.
