Unlike onigiri, which are tightly packed and triangular, onigirazu are layered like a sandwich and wrapped in nori, making them easier to fill with a variety of ingredients. Popularised in Japanese home cooking and bento culture, they’ve become a global hit thanks to their portability, visual appeal, and endless versatility—no bamboo mat required!

The Sushi Rice
- 300 Grams sushi rice
- 1 Litre water, for steaming
- 2 Tablespoons sushi seasoning

The Sandwich
- 10 Nori sheets
- protein of choice, cooked chicken, salmon, tuna tartare, etc
- 1 carrot, peeled and julienned
- 1/2 cucumber, de seeded and julienned
- 1/2 capsicum/bell pepper red, julienned
- small wedge purple cabbage, sliced thinly
- 1 avocado peeled and sliced
- 2 spring onion, thinly sliced
- 1 Tablespoon pickled ginger

The Rest
- 100 Grams Easy Thermomix mayonnaise Recipe
- 1 Tablespoon black and white sesame seeds to garnish

Cook the sushi rice. Place the rice in the basket and run water over it to rinse. Place 1 litre of water in the Thermomix bowl. Insert the basket. Cook 15 min/100°C/speed 4 with spatter guard in place.

Tip rice into a bowl and pour sushi seasoning over it, stir to combine.

Press a small square of rice into the centre of the nori sheet.

Add your choice of protein—chicken, fish fingers, or smoked salmon.

Layer on the veggies: carrot, cucumber, capsicum, cabbage, avocado, spring onion, and pickled ginger.

Keep everything neat and even on that rice square.

Wrap it up:

Dampen the edges of the nori with a little water on your finger.

Fold up the sandwich, ‘fish and chips’ takeaway style.

Allow them to rest a little for flavours to combine and the nori to do it's job of containment! Cut into halves diagonally and serve immediately.

These can be wrapped uncut and kept in the fridge for up to 24 hours.
