Pine and Lime Yoghurt Palate Cleanse
A palate cleanser is any food or drink served between courses to prepare you for the next course. Palate cleansers often have neutral flavours that serve as a baseline for more complex flavours, and they’re designed to improve digestion, stimulate the appetite, or remove any lingering aftertastes so you are ready to truly enjoy the next course.
This recipe also works with as a little larger serving with fruits of choice as a light summer dessert. I think it is perfect with grapes, not the squashed alcoholic kind, but the fresh kind. (Just saying!)
We also love it with frozen grapes which are the perfect summery treat in their own right. Just wash and remove from stalks, then freeze in ziploc or freezer safe bags. Perfect snackery for poolside or beachside when the kids require something sweet and cold.

Need
- 250 Grams sugar
- 150 Grams water
- 2 Teaspoons vanilla bean paste BUY
- 350 Grams fresh pineapple, in chunks
- 3 limes, zest only, finely grated
- 100 Grams lime juice, fresh
- 30 Grams maple syrup (or other syrup of choice)
- 300 Grams Greek style yoghurt
- frozen grapes, for garnish

Place sugar, water and vanilla bean paste into Thermomix bowl and cook 8 min/80°C/ speed 2.

Transfer to another bowl to cool completely.

Place pineapple, lime zest and juice, and syrup into Thermomix bowl and blend 10 sec/ speed 10. Add sugar syrup and yoghurt. Combine 5 sec/speed 10.

Pour into flat tray and freeze at least 5 hours.

Break up and blend with the aid of the spatula, 30 sec/speed 10.

Serve immediately with frozen grapes as a garnish. Or keep in freezer until use.

The syrup will prevent this from freezing to a very hard consistency. It should therefore always be easy to serve straight from the freezer.
