Pistachio Biscuits
Why ever buy biscuits/cookies from the store again when you can make them as easily and delcious as these Pistachio Biscuits? Give them a go!
I love pistachio anything. In my new book I have created a Pistachio Paste, which you should really try, good on it’s own, but really good in the Pistachio Pudding recipe, also in the new book. But I digress!!
These are not macarons, but close to a pistachio version of such a thing. SO good. The perfect blend of buttery richness and earthy sweetness of pistachios. You will love them. Pretty sure. And gluten free! Have them with a cup of tea, as a desert companion, or on its own. (You’re welcome!)

Need
- 120 Grams pistachios, shelled
- 160 Grams golden caster sugar
- Pinches pink salt flakes BUY
- 50 Grams corn flour
- 2 Teaspoons vanilla extract BUY
- 3 egg whites
- Additional chopped pistachios for garnish
- Icing sugar to dust

Preheat oven to 170ºC. Line two baking trays with baking paper and set aside.

Place pistachios and 60g of the sugar into Thermomix bowl and mill 10 sec/speed 8.

Add cornflour and vanilla extract and mix 5 sec/speed 5. Set aside.

Clean and dry Thermomix bowl thoroughly.

Place egg whites and salt into Thermomix bowl and beat 4 min/Butterfly/60ºC/speed 3 as you add sugar one spoon at a time through the hole in the lid. Remove Butterfly.

Place pistachio mix back into the bowl and incorporate 8 sec/speed 2-3. Finish folding mixture through with the spatula if necessary.

Place spoonfuls of mixture onto prepared trays, top with a few chopped pistachios and bake for 10-12 minutes until browned at the edges and set in the centre.

Dust with icing sugar whilst still warm.
