Roasted Broccoli Salad
First day of Perth lockdown in 2021 saw me looking in the fridge for something yummy! NOOO. Get out of the cheese draw Teen. SO this happened for lunch.
Perfectly delish. Easy as bro. And kind of ok for a lockdown meal. You could use it for a side, but lunch it was. The benefits of eating more broccoli are out there, I mean which mum doesn't want her kids to eat broccoli twice a week?
Broccoli is an excellent detoxifier thanks to sulphur, vitamin C, and other amino acids. Free radicals do the damage to your body, but the powerful antioxidants found in broccoli can remove these toxins including uric acid. Arthritis, gout, and boils are related to problems with toxins. You can purify your body when you eat broccoli. Second helping anyone?

The Salad
- 1 large head broccoli
- 2 Tablespoons dried Italian herb mix, (needs to have chilli flakes, if you don't have this, add a few dried chilli flakes)
- Good Pinches pink salt flakes BUY
- black pepper to taste
- 50 Grams Extra Virgin Olive Oil (EVOO) BUY
- Small Handfuls pine nuts
- Small Handfuls raisins
- 60 Grams soft feta or goats cheese

The Dressing
- 1 cloves garlic
- 40 Grams Sherry vinegar
- Generous glug Extra Virgin Olive Oil (EVOO) (This will depend on how much oil is evident on the roasted broccoli. Gauge accordingly!) BUY
- 1 Pinch pink salt flakes BUY

Turn the oven to 200°C and line an oven tray with baking paper.

Wash and chop the broccoli florets into relatively small pieces. Bigger is not better! Arrange on the prepared tray.

Add the dried herbs on top, salt and pepper, then drizzle it all with EVOO coating well.

Roast for 10 minutes. Remove from the oven and add pine nuts. Return to the oven for a further 5 minutes. If you are doubling this recipe, cooking time for the broccoli will increase, but not for the pine nuts.

Cool the broccoli on tray while you prepare the dressing.

Place all the ingredients into the Thermomix bowl and blend 8 sec/speed 6. Taste and adjust seasoning if needed.

Place broccoli mixture into a serving bowl with raisins and feta. Drizzle with dressing, toss gently and serve!
