Wedge Salad
A Classic Steakhouse-Inspired Salad with Crisp Iceberg, Creamy Blue Cheese, and Crunchy Bacon
The wedge salad is an American steakhouse icon! Crisp, cold iceberg lettuce cut into hearty quarters, drizzled with rich blue cheese dressing, and sprinkled with crunchy bacon, chives, and sometimes even cherry tomatoes. I first discovered this gem of a salad during my time in the USA, and it brings back memories of big meals, bustling restaurants, and always ordering the wedge as a starter. It’s simple, satisfying, and surprisingly elegant. I was actually hired at university to be the salad bar monitor...(I have another name for it, but we will leave that there.) This is where I really fell in love with American salad culture. They really know how to put a salad together that is way more than a handful of soggy greens on a plate. Just saying; restaurants who call that salad...I have my eye on you!
Serve this salad with:
A perfectly grilled steak or roast beef
Roast lamb or beef sliders
Warm sourdough or cheesy pull-apart bread
A baked potato or smashed crispy potatoes
Tomato soup or a light vegetable broth for a starter pairing

Need
- 1 iceberg lettuce, cut into 4-6 wedges
- 1 Punnet cherry tomatoes halved
- 4 rashers of bacon, cooked until crisp, crumbled
- 1 Bunch chives, snipped
- 4-6 eggs hard boiled and chopped
- 1 Batch Blue Cheese Salad Dressing ready to go Recipe

Prepare the salad by arranging a wedge of lettuce on each plate. Top with all of the ingredients as listed.
