Rose and Pistachio Blondie
These could be my favourite blondie yet...make them today to see if they are yours too.
We have discussed blondies in several places on this site, but in essence, a blondie is a dense, sweet dessert bar similar to a brownie but made without cocoa. It typically contains brown sugar, butter, flour, and often includes vanilla and white chocolate or nuts. Blondies have a rich, caramel-like flavor and a chewy texture. Add some buttercream and pistachio paste and this is next level, mouthwateringly good cakery.

The Blondie Layer
- 85 Grams butter BUY
- 150 Grams dark brown sugar
- 50 Grams coconut sugar
- 1 Pinch pink salt flakes BUY
- 2 Teaspoons vanilla bean paste BUY
- 2 Tablespoons pure maple syrup
- 2 eggs
- 160 Grams bakers or strong flour
- 1 Teaspoon baking powder
- 100 Grams shelled pistachios
- 250 Grams chocolate white callets BUY

The Pistachio Buttercream
- 100 Grams butter BUY
- 200 Grams icing mixture
- 20 Grams cream BUY
- 70 Grams Pistachio Paste Recipe

The Garnish
- 1 Handful shelled pistachios roughly chopped
- 1 Tablespoon edible rose petals

The Blondie Layer;
- 2
Preheat the oven to 160°C and line a 30cm x 25cm tin with baking paper.

Place butter in the Thermomix bowl. Melt 3 min/80°C/speed 2.

Add sugars, salt, vanilla and maple syrup into the Thermomix bowl. Mix 6 sec/speed 6.

Add eggs and blend 6 sec/speed 6.

Add flour and baking powder and combine 12 sec/Interval/dough setting.

Stir in pistachios and chocolate. Spread into prepared tin and level.

Bake for 25-30 minutes. Let cool in tin.

The Pistachio Buttercream;
- 10
Place butter, icing mixture and cream into the Thermomix bowl. Combine 20 sec/speed 6. Scrape bowl and repeat. Add Pistachio paste and stir through.

Spread on top of cold blondie. Top with pistachios and rose petals. Refrigerate in an airtight container and serve for up to 3 months.
