Smoked Cinnamon Chocolate Horchata
Well this was fun. I love my kitchen torch at the best of times, so when I had this idea, out it came again! I also have a lot of glass domes and never before used for smoking...but now that I have had the idea, watch out! This is just a very subtle grown up taste to this delicious drink. Horchata is Mexican through and through and you can have literally any flavour you can conjure up. Usually fruit based in fact. See some of my other recipes for Horchata. But I love my Brew Choc more than I love my kitchen torch...so a chocolate horchata was just a matter of time. I hope you love this one as much as we did. Add the shot of vodka for a martini...don't forget to get smoking though! It is a game changer!

Need
- 125 Grams rice
- 100 Grams raw cashews
- 80 Grams Brew Choc BUY
- 350 Grams water for soaking + extra as directed
- 60 Grams coconut sugar
- 2 Teaspoons vanilla bean paste BUY
- 3 Drops doTERRA cinnamon bark oil BUY
- 1-2 cinnamon stick(s)

Place rice, nuts, brew choc and 350g water into a bowl, stir well, cover and soak overnight or up to 24 hours.

Place soaked mixture and 1-2 cups extra water into the Thermomix bowl and blend 2 min/speed 10.

Strain through a nut milk bag and discard solids. Pour the horchata into a clean Thermomix bowl and add sugar, vanilla and cinnamon bark oil. Blend 30 sec/speed 8. Chill. If this seems too thick to you, add more water to dilute. It should have the consistency of runny cream.

When ready to serve, get the following things ready. Glasses for serving. A glass dome that the glasses will fit into. A heat proof plate or dish. Cinnamon stick. Kitchen torch.

Pour the first glass and place it onto the plate. Make sure if you place the dome over the top it will seal all the way around. Light the cinnamon stick at one end like a cigar and place under the dome with the glass. Leave for a few minutes. It will smoulder and the dome will fill with smoke and infuse the drink. Repeat for each serving. It is quite theatrical and fun to do this at a party. Also, adding a shot vodka would not be terrible or so I am told.!
