Steamed Lemon Custard
Hello Lemonliscious! I love all things lemon and this is no exception. It is fluffy and light and really lovely in the winter straight from the steam oven. But also completely summery straight from the fridge...the perfect lemon hit. If you wanted to add something crunchy you could serve with Langues de Chat Dessert Biscuits or even Ginger Nut Biscuits (Cookies). They are also fantastic with all the berries...whatever ones you fancy or are in season. Let your inner Masterchef do the decorating...Enjoy!

Need
- 150 Grams golden caster sugar
- 75 Grams butter BUY
- 2 lemons, zest and juice
- 4 large eggs
- 40 Grams flour
- 1250 Grams milk
- 10 Drops doTERRA lemon oil BUY

Butter 6 ramekins. put them on a tray and set aside. Preheat steam oven to 175°C and steam. If you don't have a steam oven, place a large dish of water in the bottom rack of your oven and set the temp to 175°C.

Place sugar, butter and lemon zest into Thermomix bowl and blend 30 sec/speed 6.

Add all remaining ingredients including lemon juice to Thermomix bowl.

Blend 2 min/speed 10.

Divide mixture between ramekins.

Place tray into steam oven and process for 25 minutes.

Remove and chill (yummy when warm). Dust with icing sugar if you wish.

Try fresh or frozen berries, or a coulis from berries. I ended up serving them with (recipe to still be on here!)
Also a dollop of freshly whipped cream to serve if you dare.
