Avocado & Lime Mayonnaise
What is better than homemade mayo? Avocado and Lime homemade mayo. You can use it as a dip, a salad dressing, or just straight from the jar!
I tend to make mayonnaise just before I need it. When you taste this one, you will realise why; it is just so edible straight from the jar I may or may not have done that before, but am admitting nothing! But you have been warned.
The avocado gives this mayonnaise a terrific texture. It’s fantastic on steamed fish, as the dressing in sushi, on a rice and tuna salad or in place of any other mayo. (Or as previously pointed out, straight from the jar!)

Need
- 2 egg yolks
- 15 Grams white wine vinegar
- 1 Teaspoon French Mustard
- 1 Teaspoon pink salt flakes or to taste BUY
- 400 Grams flavourless oil
- Juice 1 lime
- 1 ripe avocado
Do

Place egg yolks, vinegar,mustard and salt into the Thermomix bowl and mix 1 min/37°C/speed 5.

Add oil through hole in lid with MC in place, 3 min/37°C/speed 5.

Add lime juice and avocado and blend 10 sec/speed 5.

Scrape into sterilised jar and keep in fridge up to 3 weeks.
