Simple Eggs Florentine in Toast (An Easy Brunch Classic)

I do love an eggy bite of something mid-morning. Put the egg into the middle of a perfectly golden, buttery, fried piece of bread, add that hollandaise, and of course some wilted spinach, or smoked salmon, or crispy bacon and hello! Perfection on a plate. This recipe is easily made to order.

This simple Eggs Florentine on toast is proof that a classic brunch favourite doesn’t need a long ingredient list or restaurant-level fuss. Soft eggs, buttery spinach and buttery toast come together in minutes, making it perfect for a lazy weekend breakfast or a quick, elegant brunch at home. Comforting, timeless and endlessly adaptable — this is one you’ll make on repeat.

Cut a hole into the centre of each slice of bread using a scone cutter.

Melt the butter in a large frying pan on a medium high heat, until sizzling and smelling fragrant.

Toast one side of the bread in the butter until golden and crisping up.

Turn over and crack the egg into the hole. Cook until egg yolk is to taste (soft for me) being careful not to burn the bread.

5  

Serve with wilted spinach, plenty of hollandaise over the egg and garnished with chives. Season to taste.
