Is there anything more comforting than fried potatoes? Well, maybe. This recipe has all the makings for something better. Think smashed limey avocado, Parmesan cream (which frankly is better than sex, trust me) and then add eggs, bacon, salmon, hollandaise into the mix and you are really living it up. All on top of crispy potato pancakes. You're welcome.
This recipe appears in my most recent best seller, The Weekend Table, which you all have a copy of no doubt. If not, better head over here and get yours fast. You will not regret it.
