Potato Latkes
This potato latke is way more than your average potato pancake!
Is there anything more comforting than fried potatoes? Well, maybe. This recipe has all the makings for something better. Think smashed limey avocado, Parmesan cream (which frankly is better than sex, trust me) and then add eggs, bacon, salmon, hollandaise into the mix and you are really living it up. All on top of crispy potato pancakes. You're welcome.

The Latkes
- 1 Kilo potatoes, peeled and roughly chopped
- 1 brown onion peeled and quartered
- 2 eggs
- 2 Pinches pink salt flakes BUY
- 160 Grams plain flour BUY
- Extra Virgin Olive Oil (EVOO) for frying BUY

To Serve
- 1 Batch Parmesan Foam or Emulsion or Cream to serve Recipe
- 1 eggs per serving
- 1-2 avocado
- crispy bacon, smoked salmon etc
- red chilli sliced
- limes cut in wedges

Place half of the potatoes into the Thermomix bowl and chop 3 sec/speed 5. Tip out into a large bowl. Add remaining potatoes and chop 3 sec/speed 5. Add to the bowl.

Rinse chopped potatoes in cold water and pat dry on sheets of paper towel.

Place onion into the Thermomix bowl and chop 2 sec/speed 7. Tip out onto paper towel and pat dry. Add to the potatoes.

Add egg, salt and flour to the potato and onion and stir to combine.

Preheat a pan to medium heat with a splash of EVOO.

Place a heaped tablespoon of the mixture into the hot oil, pressing down to flatten. Cook a couple minutes each side, or until browned.

Serve with smashed avocado, Parmesan Cream and sliced chillies to garnish. A poached egg is also amazing on these, or crispy bacon!
