I think flummery is as much fun to eat as it is to say. Just say it a few times and see if you agree with me! I love it! The sky is the limit with flavours when you start from scratch. Let your imagination run wild and go with any flavour that is seasonal and that you love. (Well, maybe not banana, but apart from that!) Place the syrup into the Thermomix bowl and bring to a boil 8 min/100°C/speed 3.

Add gelatin and blend 10 sec/speed 6.

Add remaining ingredients and whip 2 min/Butterfly/speed 4.

Divide between tea cups or serving glasses or bowls and refrigerate for at least 5 hours before serving with whipped cream and some of the type of fresh fruit you used in the syrup.
