When a recipe calls for almond meal or almond flour, no need to head to the store, just get the almonds out. Voila!

You have just found the best recipe ever and it needs Almond meal or almond flour. Damn. You only have almonds, with skins on. What to do?

Easy. Throw them in the Thermomix or the food processor and knock yourself out. Almond Flour is considered to be the product of whole almonds (or almonds that have skins on!) Almond meal is the result of milling blanched almonds.

I have written this recipe as 100g of almonds, but do I have to explain that if you need 110g of almond meal, you go with 110g almonds? Just checking!

There you go. Problem solved. So simple, and cheaper and fresher than buying either ingredient ready made. You're welcome.

Fresh almond meal will last 1-2 in room temperature if stored in an airtight container. Storing it in the freezer is the best long-term option as it'll keep for 6-12 months.
