'Not tinned' spaghetti is the tinned spaghetti you miss, but feel bad about serving to your kids. This is our homemade version and honestly in a blind tasting ten out of ten people couldn't tell the difference...the only difference is the lack of preservatives and colours. (KIdding, we did not blind taste test it at all, but when we tasted it ourselves, we were struggling to describe the flavour we recognised but couldn't define until it hit us....tinned spaghetti from childhood!)
It is actually almost impossible to find alphabet pasta, we had to order it online. If you have any hints on where to find it in store, by all means share. We did search Perth pretty thoroughly. You can of course use any short pasta, technically not spaghetti of course, but have you ever seen a long strand of pasta come out of a tin? Me neither!
So transport yourself back to days of yore and try our not tinned spaghetti...with plenty of butter on that toast.

- 1 Punnet cherry tomatoes
- 8 roma tomatoes, quartered
- 2 Pinches pink salt flakes BUY
- 4 Tablespoons raw caster sugar BUY
- 3 Tablespoons balsamic vinegar
- 2 Tablespoons Extra Virgin Olive Oil (EVOO) BUY
- 2 brown onion peeled and halved
- 2 cloves garlic
- 2 Tins diced tomatoes
- 300 Grams water
- 250 Grams alphabet pasta (or any pasta)

Preheat oven to 200°C and line a baking tray with paper.

Place tomatoes onto paper and sprinkle with salt, 2 tbsp of the sugar, balsamic vinegar and EVOO.

Roast 15 minutes and switch oven off. Leave tomatoes in oven until cooled.

Meanwhile place a little more EVOO, onions and garlic into Thermomix bowl and chop 4 sec/speed 6.

Sauté 7 min/Varoma/speed 1.

Add diced tinned tomatoes and roasted tomatoes. Cook 10 min/100°C/speed 1. Puree 10 sec/speed 6.

Add water and alphabet pasta. Cook 6 min/100°C/Reverse/speed 2

Serve on toast, or eat as it. You will be amazed at how much this tastes like good old fashioned tinned spaghetti! (Thus our title.)
