Raw Lemon Slice

- 200 Grams medjool dates, pitted
- 120 Grams Cashews raw
- 70 Grams Shredded Coconut plus a little extra for the top BUY
- 1 Tablespoon Fresh Lemon Juice
- 60 Grams Cashews raw
- 60 Grams Coconut Oil BUY
- 80 Grams Rice Malt Syrup BUY
- 1 Lemon zest and juice
Line a small baking dish with baking paper.
Place all ingredients into the Thermomix bowl and mix 10 sec/speed 8.
Press into lined tin.
Place all ingredients into the Thermomix bowl and mix 20 sec/speed 8. Scrape bowl and repeat.
Pour over base. Sprinkle more coconut and lemon zest on top.
Freeze for 2 hours, cut up and store in the freezer. Best eaten frozen.
